Ingredients
- 1,5kg chicken thighs (and drumsticks)
- 200ml cooking cream (or Greek yogurt if you like it more sour)
- 1 tbsp coconut oil
- 1 larger onion
- 2tbsp curry paste (to make your own, follow instructions below)
- Salt to taste
- Curry paste
- 1tbsp tomato puree
- 1 tsp sweet paprika powder
- 3 cloves garlic
- 1/4 tsp turmeric
- 1/4 tsp ground cumin
- Pinch of pepper
Prep
Step 0: Blend the paste ingredients if you don’t have ready made.
- In a large skillet pour coconut and regular vegetable oil to cover the bottom.
- Fry the chicken, skin facing down, for about 10 minutes, then flip. Dice the onions while the chicken is frying.
- When golden brown on both sides, take the meat out and pour the diced onion.
Fry the onion until soft and golden, stir i the curry paste and pour the chicken. Add water to cover the meat. - Cook with the lid on for about 45 minutes, flipping the chicken thighs occasionally.
- Stir in the cooking cream and let simmer for another 15 minutes.
Serving:
Serve with a portion of fluffy garlic rice or boiled potatoes.
