What’s both healthy and looks like fireworks on a plate? Well, many things for sure, but here’s an idea for a refreshing, colorful salad with kohlrabi.
This kind of forgotten super veg, also known as German turnip or turnip cabbage, has a discrete, radishy taste and a chewy texture, making it a great option for blending into salads (and pickles too! 😉 ) or serving as raw chips.
Great for a summer dinner with just a few add-ons, or as a side for lunch, this colorful kohlrabi salad is packed with vitamins.
Ingredients
- 1/4 cabbage, shredded
- 1/2 chopped red pepper
- 1/2 chopped green pepper
- 50g (handful) rocket
- 1/2 kohlrabi thinly sliced
- 1/2 lemon juice
Prep
- Peel the kohlrabi and either grate or slice it thinly.
- Mix all the ingredients in a large bowl. Season with salt, pepper, olive oil and lemon.
- You can also add a bit of smoked pepper flakes, garlic and/or garnish with fresh parsley.
Serving
For a light dinner you can add some thinly diced prosciutto, any hard cheese, or croutons.
