Bunny salad – simple, cheap and very refreshing

Prep time 15min

Difficulty easy

Experimenting with ingredients I have in my fridge, I usually get very interesting and affordable meals, such as the cabbage and carrots salad I recently (re)discovered. While I’ve seen something like this in many restaurants, it’s never as simple and tasty as my own. I named this salad bunny salad, because it’s two main ingredients are supposedly the bunnies’ favorite treats.

No bunnies were harmed while conducting this delicious experiment.

The salad basically consists of cabbage and carrots, it’s very healthy and nutritious and it’s also very refreshing.

If you like to complicate food, you can experiment adding other ingredients such as aceto balsamico, corn, onions, garlic, mushrooms, soy sauce, etc, but I prefer it simply seasoned with oil and salt.

Ingredients

  • 1/2 kg (half a smaller one) cabbage
  • 1/2 kg carrots (8 mid sized)
  • 3 tbsp oil (doesn’t need to be olive)
  • salt to taste
  • pepper, chili flakes if you like

Preparation

  1. You need to cut both the carrots and the cabbage into thin stripes, about a thumb long. For the cabbage, a knife will do, but the carrots will be much easier with a peeler or similar cutting device.
  2. Put in a bowl and pour salt over. I suggest you leave it for 5-10 minutes because the salt will make the vegetables more tender and easier to stir. Pour oil and stir.
