Well, many things for sure, but here&#8217;s an idea for a refreshing, colorful salad with kohlrabi.<\/p>\n\n\n\n<p>This kind of forgotten super veg, also known as German turnip or turnip cabbage, has a discrete, radishy taste and a chewy texture, making it a great option for blending into salads (and pickles too! \ud83d\ude09 ) or serving as raw chips.<\/p>\n\n\n\n<p>Great for a summer dinner with just a few add-ons, or as a side for lunch, this colorful kohlrabi salad is packed with vitamins.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-group recipe-box has-base-background-color has-background has-global-padding is-layout-constrained wp-block-group-is-layout-constrained\" style=\"padding-top:var(--wp--preset--spacing--50);padding-bottom:var(--wp--preset--spacing--50)\">\n<div id=\"ingredients\" class=\"wp-block-group ingredients has-global-padding is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1\/4 cabbage, shredded&nbsp;<\/li>\n\n\n\n<li>1\/2 chopped red pepper<\/li>\n\n\n\n<li>1\/2 chopped green pepper<\/li>\n\n\n\n<li>50g (handful) rocket<\/li>\n\n\n\n<li>1\/2 kohlrabi thinly sliced&nbsp;<\/li>\n\n\n\n<li>1\/2 lemon juice&nbsp;<\/li>\n<\/ul>\n<\/div>\n\n\n\n<div id=\"prep\" class=\"wp-block-group method is-layout-flow wp-block-group-is-layout-flow\">\n<h2 class=\"wp-block-heading\">Prep<\/h2>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Peel the kohlrabi and either grate or slice it thinly.<\/li>\n\n\n\n<li>Mix all the ingredients in a large bowl.
