Gibanica Gužvara – superb cheese and phyllo pie

Great for breakfast, dinner or as a side dish, the Gužvara (wrinkly pie) is one of the most popular homemade pastries in Serbia and the Balkans.


  • 8 eggs
  • 1kg phyllo (filo) sheets
  • 500g salty cottage or similar crumble cheese
  • 500ml greek yogurt
  • 200ml vegetable oil
  • 500ml spring water
  • 1 tsp baking powder
  • Handful of sesame seeds


  • Preheat the oven to 200oC
  • Prepare a larger baking tray, brush the bottom and sides with oil
  • In a large bowl mix the ingredients (except the phyllo sheets) with a spoon or fork
  • Wrinkle each phyllo sheet and dip into the mixture and stack in the baking tray side by side until it’s full.
  • if there’s mixture left, pour it over.
  • For extra sass, sprinkle the sesame seeds over.
  • Bake for about 40 minutes.
